Ingredients

  • ¾ cup shelled raw pistachios
  • 1 cup raw walnuts
  • 10 pieces medjool dates, pitted
  • 1 tsp vanilla extract
  • 1 tbsp coconut oil, melted
  • 1 tsp cinnamon
  • 1 tbsp cacao powder
  • ¾ cup Enjoy Life Foods mini chocolate chips
  • to taste sea salt flakes for topping
  • 1 scoop collagen peptides (optional, not vegan)

Instructions

  1. Pulse ¼ cup of the pistachios in a food processor until chunky for topping and set aside.
  2. Pulse the dates until a ball forms.
  3. Add the remaining pistachios, walnuts, vanilla, coconut oil, cinnamon, cacao, and collagen to the food processor.
  4. Pulse until everything is blended well and you can form balls.
  5. Line a baking sheet with parchment paper and form 15 balls.
  6. Freeze the balls for 30 minutes.
  7. Melt the chocolate chips in the microwave in 30-second intervals.
  8. Dip each ball in chocolate, top with crushed pistachios, and sprinkle sea salt on top.
