Ingredients

The truffles

  • ½ cup raw macadamia nuts
  • cups desiccated unsweetened coconut
  • ¼ cup finely chopped cacao butter (melted)
  • 2-4 Tbsp organic powdered sugar (or sub stevia to taste)
  • ½ tsp vanilla extract
  • 1 pinch sea salt (optional)

For rolling

  • ¾ cup desiccated unsweetened coconut

Instructions

  1. Blend macadamia nuts and desiccated coconut until a creamy paste forms.
  2. Add melted cacao butter, powdered sugar, vanilla, and optional sea salt, and mix until combined.
  3. Taste and adjust flavor as needed.
  4. Transfer the mixture to a shallow dish and refrigerate for about 1 hour until firm.
  5. Prepare a small dish with desiccated coconut for rolling.
  6. Scoop out rounded tablespoon amounts of the mixture and roll into balls or leave as discs.
  7. Roll the formed truffles in the desiccated coconut to coat.
  8. Place on a serving plate and refrigerate for an additional 5-10 minutes to set.
