Vegan White Chocolate Truffles

raw macadamia nuts

desiccated unsweetened coconut

finely chopped cacao butter (melted)

organic powdered sugar (or sub stevia to taste)

For rolling

desiccated unsweetened coconut
Instructions
- Blend macadamia nuts and desiccated coconut until a creamy paste forms.
- Add melted cacao butter, powdered sugar, vanilla, and optional sea salt, and mix until combined.
- Taste and adjust flavor as needed.
- Transfer the mixture to a shallow dish and refrigerate for about 1 hour until firm.
- Prepare a small dish with desiccated coconut for rolling.
- Scoop out rounded tablespoon amounts of the mixture and roll into balls or leave as discs.
- Roll the formed truffles in the desiccated coconut to coat.
- Place on a serving plate and refrigerate for an additional 5-10 minutes to set.
