Ingredients

The truffles

  • 9 ounces vegan dark chocolate
  • cup canned full-fat coconut milk
  • ½ teaspoon vanilla extract (optional)

The coating (optional)

  • ¼ cup unsweetened cocoa or cacao powder
  • ¼ cup finely ground hazelnuts

Instructions

  1. Finely chop the dark chocolate and place it in a mixing bowl.
  2. Heat the coconut milk in the microwave until warm but not boiling.
  3. Pour the warm coconut milk over the chopped chocolate and cover to trap heat for 5 minutes.
  4. Stir the mixture gently until smooth and creamy, microwaving in short intervals if necessary.
  5. Add vanilla extract if desired and mix well.
  6. Refrigerate the mixture for 1 to 3 hours until firm.
  7. Scoop out tablespoon-sized portions and roll them into balls.
  8. Roll the truffles in cocoa powder or ground hazelnuts if desired.
  9. Store in the refrigerator until ready to serve.
