Instructions
- Finely chop the dark chocolate and place it in a mixing bowl.
- Heat the coconut milk in the microwave until warm but not boiling.
- Pour the warm coconut milk over the chopped chocolate and cover to trap heat for 5 minutes.
- Stir the mixture gently until smooth and creamy, microwaving in short intervals if necessary.
- Add vanilla extract if desired and mix well.
- Refrigerate the mixture for 1 to 3 hours until firm.
- Scoop out tablespoon-sized portions and roll them into balls.
- Roll the truffles in cocoa powder or ground hazelnuts if desired.
- Store in the refrigerator until ready to serve.
