Ingredients

The cupcakes

  • 1 box white cake mix
  • 12 oz diet lemon-lime soda
  • 2 large egg whites

The Jell-O

  • 1 package sugar free Strawberry Jell-O mix
  • 1 cup boiling water

The topping

  • 8 oz Cool Whip reduced fat whipped topping
  • 12 pieces strawberries, cut in half

Instructions

  1. Preheat the oven to 350°F and prepare a cupcake tin with liners.
  2. Mix the cake mix, diet soda, and egg whites until smooth.
  3. Fill the cupcake liners with the batter and bake as directed on the cake mix box, about 20 minutes.
  4. Let the cupcakes cool for 20 minutes, then poke holes in the tops with a fork.
  5. Dissolve the Jell-O mix in boiling water and pour it over the cupcakes.
  6. Refrigerate the cupcakes for at least 30 minutes.
  7. Top each cupcake with Cool Whip and half a strawberry before serving.
