Instructions
- Preheat the oven to 350°F and prepare a cupcake tin with liners.
- Mix the cake mix, diet soda, and egg whites until smooth.
- Fill the cupcake liners with the batter and bake as directed on the cake mix box, about 20 minutes.
- Let the cupcakes cool for 20 minutes, then poke holes in the tops with a fork.
- Dissolve the Jell-O mix in boiling water and pour it over the cupcakes.
- Refrigerate the cupcakes for at least 30 minutes.
- Top each cupcake with Cool Whip and half a strawberry before serving.
