Grilled Scallops with Tomato Vinaigrette

Instructions
- Soak wood skewers if using and preheat the grill to medium-high.
- Pat the scallops dry and place them in a bowl.
- Drizzle with olive oil, add salt, pepper, zest, garlic, and coriander, then toss gently and let stand for 15 minutes.
- Skewer the scallops if needed using two skewers to prevent them from turning.
- Grease the grill to prevent sticking and place the scallops on the grill.
- Cover and grill for 2-3 minutes, then turn and grill for another 2-3 minutes until desired doneness.
- Serve the grilled scallops with grilled veggies or a salad and drizzle with vinaigrette or citrus.
