Grilled Scallops with Tomato Vinaigrette

Ingredients

  • 1 pound scallops, patted dry
  • 2-3 teaspoons olive oil to coat
  • a pinch salt
  • a pinch pepper
  • 2 teaspoons orange zest (or lemon zest or lime zest)
  • 2 cloves garlic, finely minced
  • ½ teaspoon coriander (optional)

Instructions

  1. Soak wood skewers if using and preheat the grill to medium-high.
  2. Pat the scallops dry and place them in a bowl.
  3. Drizzle with olive oil, add salt, pepper, zest, garlic, and coriander, then toss gently and let stand for 15 minutes.
  4. Skewer the scallops if needed using two skewers to prevent them from turning.
  5. Grease the grill to prevent sticking and place the scallops on the grill.
  6. Cover and grill for 2-3 minutes, then turn and grill for another 2-3 minutes until desired doneness.
  7. Serve the grilled scallops with grilled veggies or a salad and drizzle with vinaigrette or citrus.
