Instructions
- Cut the peeled sweet potatoes using a julienne peeler, spiralizer, or food processor.
- Heat the avocado oil in a large skillet over medium-high heat.
- Add the sweet potatoes, red pepper, shallots, smoked paprika, and salt to the skillet.
- Cover and cook for 5 minutes until the potatoes are tender and start to break apart.
- Uncover and stir in the green onions and chives, cooking for another 4 minutes while stirring.
- Add the walnuts and serve warm.
