Sweet Potato Rice Pilaf

Ingredients

The base

  • 3 medium sweet potatoes
  • 1 tablespoon avocado oil
  • 1 red bell pepper diced
  • 1 tablespoon diced shallots

Seasonings

  • 1 teaspoon smoked paprika
  • ½ teaspoon sea salt

Garnish

  • 1 bunch green onions
  • 2 tablespoons chopped chives
  • 2 tablespoons chopped walnuts

Instructions

  1. Cut the peeled sweet potatoes using a julienne peeler, spiralizer, or food processor.
  2. Heat the avocado oil in a large skillet over medium-high heat.
  3. Add the sweet potatoes, red pepper, shallots, smoked paprika, and salt to the skillet.
  4. Cover and cook for 5 minutes until the potatoes are tender and start to break apart.
  5. Uncover and stir in the green onions and chives, cooking for another 4 minutes while stirring.
  6. Add the walnuts and serve warm.
