Easy Sweet Potato Rice

Ingredients

  • 1 large sweet potato
  • 4 tsp avocado or olive oil
  • ΒΌ tsp sea salt

Instructions

  1. Peel and cut the sweet potato into 1-2 inch pieces.
  2. Pulse the sweet potato pieces in a food processor until broken down into small pieces.
  3. Heat a skillet over medium heat and add 2 tsp of oil and half of the shredded sweet potato.
  4. Season with 1/8 tsp salt, stir to coat, and spread into an even layer.
  5. Cook undisturbed for 1-2 minutes until lightly browned, then toss and cover, cooking for 5-7 minutes until fragrant and cooked through.
  6. Set aside the cooked rice and repeat with remaining oil, sweet potato, and salt.
  7. Serve immediately with desired dishes.
