Easy Sweet Potato Rice

Instructions
- Peel and cut the sweet potato into 1-2 inch pieces.
- Pulse the sweet potato pieces in a food processor until broken down into small pieces.
- Heat a skillet over medium heat and add 2 tsp of oil and half of the shredded sweet potato.
- Season with 1/8 tsp salt, stir to coat, and spread into an even layer.
- Cook undisturbed for 1-2 minutes until lightly browned, then toss and cover, cooking for 5-7 minutes until fragrant and cooked through.
- Set aside the cooked rice and repeat with remaining oil, sweet potato, and salt.
- Serve immediately with desired dishes.
