Mashed Sweet Potatoes With Avocado

Instructions
- Preheat the oven to 400℉ (205℃).
- Clean and dry the sweet potatoes, poke holes in them, and microwave for about 4 minutes or bake for about an hour after rubbing them with oil.
- Cut the top ¼-½ inch off the garlic heads to expose the cloves.
- Drizzle the garlic with oil, wrap in foil, and roast in the oven with the sweet potatoes.
- Roast the sweet potatoes for about 20 minutes until cooked through and the garlic for about 30 minutes until soft and fragrant.
- Let the garlic cool, then squeeze the cloves out of the skin.
- Mash the sweet potatoes and roasted garlic together, seasoning with salt and pepper.
- Sweat the onions in a skillet with a little oil, then add chopped parsley.
- Mash the avocado with lemon juice and combine with the sweet potato mixture.
- Serve immediately topped with onions and parsley.
