Ingredients

The sauce

  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • 6 pieces cherry tomatoes, cut into halves
  • 5 slices sun-dried tomatoes
  • 1 tablespoon sun-dried tomato oil (optional)
  • 6 pieces pitted black olives, cut into halves
  • 1 tablespoon capers
  • ¼ cup white wine or cooking sake
  • 1 tablespoon mirin (optional)
  • 1 pinch salt
  • 3 dashes ground black pepper
  • 3 dashes cayenne pepper
  • 1 tablespoon fresh parsley, chopped
  • to taste squirt lemon juice (optional)

The shrimp

  • 10 ounces shrimp, shelled and deveined

Instructions

  1. Heat olive oil in a skillet over medium heat and sauté the garlic until fragrant.
  2. Add cherry tomatoes, sun-dried tomatoes, pitted black olives, and capers, and stir.
  3. Add the shrimp and pour in the white wine or cooking sake and mirin.
  4. Cook for 2 to 3 minutes until the shrimp are cooked through and the tomatoes have broken down.
  5. Season with salt, ground black pepper, and cayenne pepper, then stir in the chopped parsley.
  6. Serve immediately with a squirt of lemon juice if desired.
