Ingredients

  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • ½ cup sun-dried tomatoes in oil
  • 1 teaspoon chili flakes
  • 1 lb shrimp, shelled, deveined and tail-on
  • ¼ teaspoon salt
  • 1 tablespoon parsley leaves, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat a skillet with olive oil over medium heat and sauté the garlic lightly.
  3. Add the sun-dried tomatoes and chili flakes, stirring until the oil becomes slightly red.
  4. Add the shrimp, salt, and parsley leaves, and stir to combine.
  5. Transfer the shrimp to the oven and roast for 10 minutes.
  6. Dish out and serve immediately.
