Crispy Baked Garlic Shrimp

Ingredients

The shrimp

  • 1 pound 25/30 count shrimp with tails and shells left on

The marinade

  • ¼ cup olive oil
  • 3 cloves garlic, pressed or grated
  • 1 lemon zested and juiced
  • 1 tablespoon finely chopped flat leaf parsley
  • 2 teaspoons dried oregano
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon crushed red pepper flakes

The coating

  • 2 tablespoons dried bread crumbs, finely ground

Instructions

  1. Rinse, shell, and devein the shrimp, then transfer to a bowl.
  2. Drizzle the shrimp with olive oil, pressed garlic, lemon juice and zest, parsley, oregano, salt, black pepper, and red pepper flakes.
  3. Toss to combine, cover with plastic wrap, and refrigerate for 30 minutes.
  4. Preheat the oven to 425°F.
  5. Pour the breadcrumbs into a shallow bowl.
  6. Shake off the excess marinade and lightly dredge each shrimp in the breadcrumbs.
  7. Place the shrimp in rows on a baking sheet.
  8. Bake for 4-5 minutes until the shrimp are opaque and the breadcrumbs begin to brown.
  9. Serve warm with a squeeze of extra lemon if desired.
