Ingredients

The shrimp

  • 2 pounds extra large or jumbo shrimp, peeled and deveined (tails on or off)
  • 4 tablespoons unsalted butter
  • cup chicken stock or broth
  • 1 tablespoon garlic, minced
  • 1 teaspoon salt-free Creole seasoning (or Italian seasoning)
  • 2 tablespoons lemon juice, freshly squeezed
  • Salt to taste
  • 2-3 tablespoons fresh parsley, chopped
  • Lemon wedges for garnish

The topping

  • cup Panko breadcrumbs
  • 2 tablespoons grated parmesan cheese
  • 1-2 tablespoons melted butter

Instructions

  1. Preheat the oven to 350℉/177℃.
  2. Microwave butter, chicken stock, garlic, and Creole seasoning until the butter melts, then add lemon juice.
  3. Season shrimp with salt and pepper in a large bowl and mix with the butter mixture.
  4. Arrange the shrimp in a single layer in a baking dish or skillet.
  5. Combine breadcrumbs, parmesan cheese, and melted butter, then spread over the shrimp.
  6. Bake for 12-15 minutes until the shrimp is cooked through.
  7. Broil for 1-2 minutes until the crumbs are slightly browned.
  8. Garnish with lemon and parsley, then serve immediately.
