Greek Shrimp with Tomatoes and Feta

Ingredients

The base

  • 2 Tbsp extra virgin olive oil
  • 1 small yellow onion, finely chopped
  • 4 cloves garlic, minced
  • 1 28 oz. can diced tomatoes
  • 1 tsp honey (optional)
  • 3 Tbsp chopped fresh parsley
  • tsp Dried Oregano
  • ¼ tsp Red Pepper Flakes
  • to taste Salt and freshly ground black pepper

The shrimp and toppings

  • lbs large shrimp (21/25), peeled and deveined
  • 5 oz. feta cheese, crumbled
  • 2 Tbsp chopped fresh mint
  • for serving Lemon wedges

Instructions

  1. Heat olive oil in a large skillet over medium heat and sauté the onion until tender.
  2. Add garlic and sauté for an additional 30 seconds.
  3. Pour in the tomatoes, honey, parsley, oregano, and red pepper flakes; season with salt and pepper.
  4. Bring to a simmer, then reduce heat and continue to simmer until the sauce thickens slightly.
  5. Add the shrimp, submerge them in the sauce, cover, and cook until the shrimp are cooked through.
  6. Sprinkle with feta and mint before serving with lemon wedges.
