Instructions
- Heat olive oil in a large skillet over medium heat and sauté the onion until tender.
- Add garlic and sauté for an additional 30 seconds.
- Pour in the tomatoes, honey, parsley, oregano, and red pepper flakes; season with salt and pepper.
- Bring to a simmer, then reduce heat and continue to simmer until the sauce thickens slightly.
- Add the shrimp, submerge them in the sauce, cover, and cook until the shrimp are cooked through.
- Sprinkle with feta and mint before serving with lemon wedges.
