Baked Feta Fettuccine with Shrimp

Instructions
- Preheat the oven to 400ºF (205ºC).
- In a large skillet or baking dish, combine ghee, tomatoes, salt, and pepper.
- Place the feta cheese in the center, brush with ghee, and sprinkle with pepper.
- Bake for 25 minutes.
- Cook the fettuccine according to package directions, then drain and toss with 1 Tbsp olive oil.
- Remove the skillet from the oven and set to broil on high.
- Nestle the shrimp among the tomatoes and brush with melted ghee.
- Broil for 6 minutes until the shrimp are opaque.
- Stir in garlic and red pepper flakes, then add the cooked fettuccine and mix.
- Drizzle with the remaining olive oil and garnish with basil leaves.
- Serve and enjoy!
