Baked Feta Fettuccine with Shrimp

Ingredients

  • ½ cup ghee or clarified butter
  • 2 lb grape or cherry tomatoes
  • 1 tsp fine sea salt
  • ½ tsp freshly ground black pepper
  • 8 oz block feta cheese
  • 1 lb fettuccine
  • 2 Tbsp extra virgin olive oil
  • 1 lb large shrimp
  • 4 large cloves garlic
  • ¼ tsp red pepper flakes
  • 1 cup loosely packed basil leaves

Instructions

  1. Preheat the oven to 400ºF (205ºC).
  2. In a large skillet or baking dish, combine ghee, tomatoes, salt, and pepper.
  3. Place the feta cheese in the center, brush with ghee, and sprinkle with pepper.
  4. Bake for 25 minutes.
  5. Cook the fettuccine according to package directions, then drain and toss with 1 Tbsp olive oil.
  6. Remove the skillet from the oven and set to broil on high.
  7. Nestle the shrimp among the tomatoes and brush with melted ghee.
  8. Broil for 6 minutes until the shrimp are opaque.
  9. Stir in garlic and red pepper flakes, then add the cooked fettuccine and mix.
  10. Drizzle with the remaining olive oil and garnish with basil leaves.
  11. Serve and enjoy!
