Baked Feta with Cherry Tomatoes

Ingredients

  • 4 tablespoons olive oil
  • 1 lb. cherry tomatoes
  • 4 cloves garlic
  • 1 small shallot
  • 1 to 2 small hot chilies
  • to taste flaky sea salt
  • to taste fresh cracked black pepper
  • 7 ounces feta cheese
  • 1 handful fresh basil
  • to serve slices bread

Instructions

  1. Preheat the oven to 400ºF and position one rack in the middle and another at the top near the broiler.
  2. In a baking dish, combine 2 tablespoons of olive oil with cherry tomatoes, sliced garlic, shallots, and chilies. Season with salt and pepper and toss to coat.
  3. Place the feta on top and drizzle with the remaining olive oil, adding more pepper if desired.
  4. Bake in the middle rack for 20 minutes, then move to the top rack and broil for an additional 5 minutes, watching closely.
  5. Once done, remove from the oven, add fresh basil, and stir gently to combine.
  6. Serve warm with slices of bread.
