Baked Feta Dip with Cherry Tomatoes

Ingredients

The dip

  • 1 block (5 to 8 ounces) feta cheese
  • 4 medium cloves garlic
  • 1 pint (2 cups) cherry tomatoes
  • cup Kalamata olives (optional)
  • 2 tablespoons extra virgin olive oil
  • a pinch red pepper flakes (optional)
  • to taste freshly ground black pepper
  • to taste salt
  • 2 tablespoons thinly sliced fresh basil

For serving

  • as needed crostini or baked pita wedges or crackers

Instructions

  1. Preheat the oven to 425°F.
  2. Place the feta in a baking dish and arrange garlic, tomatoes, and olives around it.
  3. Drizzle olive oil over the mixture and season with red pepper flakes and black pepper.
  4. Bake for 20 minutes, then stir the tomatoes and tuck garlic back down.
  5. Return to the oven and bake for another 10 to 15 minutes until the tomatoes are juicy and the feta is golden.
  6. Smash the garlic cloves against the side of the dish and swirl the ingredients together.
  7. Taste and adjust salt if necessary, then sprinkle with fresh basil.
  8. Serve warm with crostini or pita wedges.
