Ingredients

Main Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon cumin seeds
  • 1 bunch lacinato kale
  • 2 cups tomato sauce
  • cups cooked chickpeas
  • 1 tablespoon fresh lemon juice
  • 1 block feta cheese (12 ounces)

For Serving

  • to taste freshly ground black pepper
  • pinch red pepper flakes
  • to serve warm pita or baguette

Instructions

  1. Preheat the oven to 350°F.
  2. Heat an oven-safe skillet over medium heat and add the olive oil.
  3. Add the cumin seeds and toast them until fragrant.
  4. Add the kale in batches, cooking until wilted.
  5. Stir in the tomato sauce, chickpeas, lemon juice, and water, and bring to a simmer.
  6. Nestle the feta slices into the sauce and sprinkle with black pepper.
  7. Transfer the skillet to the oven and bake for about 15 minutes until the feta softens.
  8. Drizzle with olive oil and sprinkle with red pepper flakes before serving.
