Ingredients

The vegetables and olives

  • ½ pint cherry tomatoes, halved
  • ½ cup pitted green olives, halved
  • ½ cup quartered artichoke hearts

The seasoning and oil

  • ¼ lemon juice from
  • ½ teaspoon crushed red pepper
  • 1 pinch sea salt
  • 2 tablespoons olive oil
  • 1 tablespoon minced Italian parsley

The cheese

  • ½ pound block of feta cheese

Instructions

  1. Preheat the oven to 400°F.
  2. In a small baking dish, combine cherry tomatoes, green olives, artichokes, lemon juice, crushed red pepper, salt, and olive oil.
  3. Mix the ingredients and transfer the dish to the oven to bake for 10 to 15 minutes until the tomatoes have softened.
  4. Switch the oven to the broiler setting and add the feta to the baking dish.
  5. Broil for 5 to 7 minutes, checking regularly until the feta is golden brown on top.
  6. Drizzle with a little olive oil and sprinkle with parsley before serving.
  7. Serve with bread.
