Ingredients

Pepita Lime Sauce

  • ¾ cup toasted pumpkin seeds
  • ¼ cup flat leaf parsley or cilantro leaves
  • 1 clove garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon agave nectar or maple syrup
  • 1 teaspoon light miso
  • 1 teaspoon lime zest
  • 2 tablespoons fresh lime juice
  • to taste sea salt
  • to taste ground black pepper
  • ½ cup water

Bowls

  • 1 cup whole farro
  • 1 bunch broccoli
  • 1 bunch kale
  • 1 ¾ cups cooked chickpeas

Instructions

  1. Prepare the pepita lime sauce by blending all sauce ingredients until smooth.
  2. Cook the farro either on the stovetop or in an Instant Pot.
  3. Steam the broccoli for about 5 minutes, then add the kale and steam for an additional minute.
  4. Assemble the bowls by dividing farro and chickpeas among them, topping with steamed vegetables and drizzling with sauce.
  5. Garnish with extra pumpkin seeds, salt, and pepper before serving.
