Ingredients

The vegetables

  • 4 small purple potatoes
  • 4 radishes
  • 1 Turkish cucumber
  • 1 carrot
  • 1 avocado
  • 1 cup shelled edamame
  • 10 asparagus spears
  • 10 green beans

Optional additions

  • cooked grains (quinoa, buckwheat, millet, black rice, farro)
  • tender lettuces
  • sunflower sprouts
  • microgreens
  • pickled onions
  • hemp seeds
  • sunflower seeds

Vegan Green Goddess Dressing

  • 1 package (12.3 ounce) silken tofu
  • 2 fat garlic cloves
  • 1 fat scallion
  • ¾-1 cup fresh herbs
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon vinegar
  • 1 tablespoon water
  • 1 teaspoon kosher salt
  • 1 teaspoon white miso paste
  • ½ teaspoon pepper

Instructions

  1. Bring salted water to a simmer and cook the potatoes until fork-tender.
  2. Prepare the radishes, cucumber, carrot, and avocado, and make the dressing.
  3. Remove the potatoes and use the same water to blanch the edamame, asparagus, and green beans.
  4. Chill the vegetables or serve them warm over grains or greens.
  5. Blend all dressing ingredients until smooth, adjusting with water if necessary.
  6. Assemble the bowls with grains, greens, and vegetables, and serve with dressing.
