Easy Green Goddess Potato Salad

Vegan Green Goddess Dressing

Spiralized Potato Pasta

sweet potatoes (peeled)

russet or yellow potato (peeled)

water for steaming

Green Goddess Dressing (see above)

green onion and parsley (to garnish)
Instructions
- Prepare the dressing by chopping all veggies and measuring them out.
- In a food processor, combine all ingredients for the dressing except the oil, then pulse until mixed.
- With the processor running, slowly add the oil until well combined.
- Peel and clean the potatoes, then spiralize or ribbon them.
- Place the spiralized potatoes in a microwave-safe bowl with water and a dash of salt.
- Microwave for 4-5 minutes until softened but not overcooked.
- Let the potatoes cool, then mix in the Green Goddess dressing.
- Garnish with chopped onion and parsley before serving.
