Ingredients

Crispy Smashed Potatoes

  • 1 ½ lbs small new potatoes
  • 2-3 tablespoons olive oil
  • to taste sea salt
  • to taste ground black pepper

Vegan Green Goddess

  • ½ cup plain vegan yogurt
  • ¼ cup vegan mayonnaise
  • 2 tablespoons cashew butter or tahini
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 2 teaspoons white balsamic vinegar or white wine vinegar
  • 1 teaspoon vegan worcestershire sauce
  • ½ teaspoon hot sauce
  • to taste sea salt
  • to taste ground black pepper
  • 2 green onions, chopped
  • ½ cup basil leaves, packed
  • cup chopped chives
  • 1 tablespoon capers
  • 2 small garlic cloves, minced

Instructions

  1. Preheat the oven to 450°F and prepare a large baking sheet.
  2. Boil the potatoes in salted water until very tender, about 25 minutes, then drain and let dry for 5 minutes.
  3. While the potatoes are boiling, prepare the vegan green goddess dressing by blending all the dressing ingredients until smooth.
  4. Brush the baking sheet with olive oil and arrange the drained potatoes on it.
  5. Smash the potatoes using an oiled glass or jar, then brush with more olive oil and season with salt and pepper.
  6. Roast the smashed potatoes in the oven for about 25 minutes until crispy and browned.
  7. Serve the warm potatoes with the vegan green goddess dressing.
