Instructions
- Preheat the oven to 450°F and prepare a large baking sheet.
- Boil the potatoes in salted water until very tender, about 25 minutes, then drain and let dry for 5 minutes.
- While the potatoes are boiling, prepare the vegan green goddess dressing by blending all the dressing ingredients until smooth.
- Brush the baking sheet with olive oil and arrange the drained potatoes on it.
- Smash the potatoes using an oiled glass or jar, then brush with more olive oil and season with salt and pepper.
- Roast the smashed potatoes in the oven for about 25 minutes until crispy and browned.
- Serve the warm potatoes with the vegan green goddess dressing.
