Crispy Smashed Potatoes

Instructions
- 1. Boil a large pot of water with a tablespoon of sea salt and add the potatoes, cooking until tender.
- 2. Drain the potatoes and let them dry.
- 3. Preheat the oven to 450°F (230°C).
- 4. Place the potatoes on a greased parchment paper and smash them with the bottom of a glass.
- 5. Drizzle olive oil over the smashed potatoes and sprinkle with flaky salt.
- 6. Bake for 25 minutes, then top with pesto or vegan cheese if desired.
