Crispy Smashed Potatoes

Ingredients

The potatoes

  • 2 lbs baby potatoes
  • 1 tablespoon sea salt
  • ½ – 1 teaspoon flaky salt
  • 3 – 4 tablespoons olive oil

Optional toppings

  • to taste pesto
  • to taste shredded vegan cheese

Instructions

  1. 1. Boil a large pot of water with a tablespoon of sea salt and add the potatoes, cooking until tender.
  2. 2. Drain the potatoes and let them dry.
  3. 3. Preheat the oven to 450°F (230°C).
  4. 4. Place the potatoes on a greased parchment paper and smash them with the bottom of a glass.
  5. 5. Drizzle olive oil over the smashed potatoes and sprinkle with flaky salt.
  6. 6. Bake for 25 minutes, then top with pesto or vegan cheese if desired.
