Crispy Smashed Potatoes

Ingredients

The potatoes

  • 1 ½ pounds small gold potatoes
  • 1 big handful salt
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • to taste freshly ground salt and pepper

For dipping

  • 1 batch garlic feta sauce

To garnish

  • as needed fresh rosemary, parsley, or cilantro

Instructions

  1. Boil potatoes in salted water until fork-tender, then drain and cool. Smash potatoes to about ⅓ inch thick. Preheat oven to 450°F. Mix olive oil and garlic powder, brush over potatoes, and season with salt and pepper. Bake for 40-45 minutes, flipping halfway, until crispy. Prepare garlic feta sauce. Garnish potatoes with herbs and serve with sauce.
