Crispy Smashed Potatoes

The potatoes

small-to-medium red or yellow potatoes
The seasonings and oil

Instructions
- Scrub the potatoes clean and rinse them under running water, removing any sprouting areas.
- Place the potatoes in a large pot, cover with water, and add 1 tablespoon of salt. Bring to a boil and cook until easily pierced with a fork.
- While the potatoes are cooking, preheat the oven to 425°F and drizzle 1 tablespoon of olive oil over a large baking sheet.
- Drain the potatoes and let them cool for about 5 minutes.
- Distribute the potatoes on the baking sheet and gently smash each potato to about ½ inch thick.
- Drizzle the remaining olive oil over the smashed potatoes and sprinkle with garlic powder, onion powder, and the remaining salt, along with black pepper.
- Bake for 25 to 30 minutes until golden on the edges, then sprinkle with fresh herbs and serve hot.
