Crispy Smashed Potatoes

Ingredients

The potatoes

  • 2 pounds small-to-medium red or yellow potatoes

The seasonings and oil

  • 1 tablespoon fine sea salt
  • ¼ teaspoon fine sea salt
  • 4 tablespoons olive oil
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • to taste freshly ground black pepper
  • 2 tablespoons chopped fresh parsley, chives and/or green onion

Instructions

  1. Scrub the potatoes clean and rinse them under running water, removing any sprouting areas.
  2. Place the potatoes in a large pot, cover with water, and add 1 tablespoon of salt. Bring to a boil and cook until easily pierced with a fork.
  3. While the potatoes are cooking, preheat the oven to 425°F and drizzle 1 tablespoon of olive oil over a large baking sheet.
  4. Drain the potatoes and let them cool for about 5 minutes.
  5. Distribute the potatoes on the baking sheet and gently smash each potato to about ½ inch thick.
  6. Drizzle the remaining olive oil over the smashed potatoes and sprinkle with garlic powder, onion powder, and the remaining salt, along with black pepper.
  7. Bake for 25 to 30 minutes until golden on the edges, then sprinkle with fresh herbs and serve hot.
