Crispy Smashed Red Potatoes

Ingredients

The potatoes

  • 1 pound small red potatoes
  • 1 tablespoon salt
  • 3 tablespoons olive oil
  • to taste pepper

The aioli

  • ¼ cup plain yogurt or mayonnaise
  • 1 clove garlic
  • 1 teaspoon lemon juice
  • teaspoon salt
  • teaspoon pepper

Instructions

  1. Preheat the oven to 450°F and grease a large, rimmed baking sheet.
  2. In a medium pot, cover the cleaned potatoes with cold water and add salt.
  3. Bring to a simmer and cook until the potatoes are fork tender, about 10 to 15 minutes.
  4. Drain the potatoes and let them cool for 5 minutes.
  5. Drizzle 1 tablespoon of olive oil over the baking sheet and add the potatoes, shaking to coat them in oil.
  6. Smash each potato using a potato masher or a flat-bottomed glass.
  7. Drizzle the remaining olive oil over the smashed potatoes and sprinkle with salt and pepper.
  8. Bake the potatoes until golden and crispy, about 30 to 40 minutes.
  9. While the potatoes are baking, prepare the aioli by mixing yogurt or mayonnaise, lemon juice, garlic, salt, and pepper in a small bowl.
  10. Serve the potatoes with the aioli.
