Crispy Smashed Red Potatoes

Instructions
- Preheat the oven to 450°F and grease a large, rimmed baking sheet.
- In a medium pot, cover the cleaned potatoes with cold water and add salt.
- Bring to a simmer and cook until the potatoes are fork tender, about 10 to 15 minutes.
- Drain the potatoes and let them cool for 5 minutes.
- Drizzle 1 tablespoon of olive oil over the baking sheet and add the potatoes, shaking to coat them in oil.
- Smash each potato using a potato masher or a flat-bottomed glass.
- Drizzle the remaining olive oil over the smashed potatoes and sprinkle with salt and pepper.
- Bake the potatoes until golden and crispy, about 30 to 40 minutes.
- While the potatoes are baking, prepare the aioli by mixing yogurt or mayonnaise, lemon juice, garlic, salt, and pepper in a small bowl.
- Serve the potatoes with the aioli.
