Ingredients

The Potatoes

  • 1 lb small red potatoes
  • 1 ½ tablespoons ghee
  • 1 ½ tablespoons olive oil or avocado oil
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • to taste coarse salt & cracked black pepper

For the Garlic-Herb Oil

  • ¼ cup olive oil or avocado oil
  • ½ cup fresh parsley leaves
  • 1 tablespoon fresh rosemary
  • 1 tablespoon fresh thyme
  • 1 small clove garlic
  • ¼ teaspoon salt

Instructions

  1. Preheat the oven to 450°F.
  2. Cook the potatoes using your preferred method (stovetop or Instant Pot) until fork-tender.
  3. While the potatoes are cooking, prepare the Garlic-Herb Oil by blending the oil, parsley, rosemary, thyme, garlic, and salt until almost smooth.
  4. Pat the cooked potatoes dry and transfer them to a parchment-lined baking sheet.
  5. Toss the potatoes with ghee, oil, garlic powder, and onion powder to coat.
  6. Smash the potatoes gently until they are about ½-inch thick.
  7. Bake the smashed potatoes for 28-30 minutes until golden brown and crispy.
  8. Sprinkle with coarse salt and cracked black pepper before serving, and drizzle with garlic-herb oil.
