For the Garlic-Herb Oil

Instructions
- Preheat the oven to 450°F.
- Cook the potatoes using your preferred method (stovetop or Instant Pot) until fork-tender.
- While the potatoes are cooking, prepare the Garlic-Herb Oil by blending the oil, parsley, rosemary, thyme, garlic, and salt until almost smooth.
- Pat the cooked potatoes dry and transfer them to a parchment-lined baking sheet.
- Toss the potatoes with ghee, oil, garlic powder, and onion powder to coat.
- Smash the potatoes gently until they are about ½-inch thick.
- Bake the smashed potatoes for 28-30 minutes until golden brown and crispy.
- Sprinkle with coarse salt and cracked black pepper before serving, and drizzle with garlic-herb oil.
