Ingredients

The salad

  • 2 cups fresh spinach
  • 3 cups fresh mixed greens
  • 1 jar sliced beets
  • 1 each avocado, sliced
  • ¼ cup feta cheese
  • 2 tablespoons sliced almonds

The dressing

  • ½ cup mayo
  • ½ cup sour cream
  • 1 teaspoon minced garlic
  • 2 tablespoons tarragon
  • 2 tablespoons fresh chives, chopped
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons lemon juice
  • to taste salt and pepper

Instructions

  1. Blend all dressing ingredients until smooth.
  2. In a large bowl or serving tray, layer and mix the spinach and mixed greens.
  3. Add the sliced beets, avocado, and feta cheese.
  4. Serve with the salad dressing.
