Ingredients

The salad

The dressing

  • ½ cup cashews
  • 2 tablespoons rice wine vinegar
  • cup olive oil
  • 2 cloves garlic, minced
  • 1 small lemon, juiced
  • ¼ cup parmesan cheese

Instructions

  1. Combine the salad ingredients in a large mixing bowl and mix well.
  2. Prepare the dressing by blending the basil, shallots, cashews, and garlic in a food processor, then add the lemon juice, vinegar, and olive oil, and blend until smooth.
