Vegetarian Leek Quiche Pie

Ingredients

  • 2 tbsp butter
  • 2 cups leeks, chopped
  • to taste salt
  • to taste freshly ground pepper
  • 1 pre-cooked quiche dough
  • 4 big eggs
  • 1 cup cream
  • 1 cup Emmenthal cheese, grated
  • 1 pinch nutmeg

Instructions

  1. 1. Preheat the oven to 375°F.
  2. 2. Heat the butter in a skillet over medium heat.
  3. 3. Add the leeks, season with salt and pepper, and cook for 12 minutes until softened.
  4. 4. Remove the leeks from the skillet, drain well, and allow to cool slightly.
  5. 5. Place the quiche dough in a pie tin and spread the leeks in the dough-lined tin, seasoning well.
  6. 6. Mix the eggs with the cream and pour over the leeks.
  7. 7. Cover with cheese, sprinkle with nutmeg, and bake for 25 to 30 minutes.
