Spring Wild Rice Salad

Ingredients

The dressing

  • 1 clove garlic
  • ¼ cup almond butter
  • 1 unit lemon zest
  • ¼ cup fresh lemon juice
  • 2 tablespoons olive oil
  • ¼ cup hot water
  • ½ teaspoon fine grain sea salt

The salad

  • 1 bunch asparagus
  • 4 cups cooked wild rice
  • 1 cup cooked yellow split peas
  • 1 bunch chives
  • ¼ cup goat cheese

Instructions

  1. Prepare the almond dressing by whisking together garlic, almond butter, lemon zest, lemon juice, and olive oil. Thin with hot water and add salt.
  2. Boil water in a saucepan, salt it, and cook asparagus for about a minute until tender. Drain and cool under cold water.
  3. In a large bowl, combine wild rice, split peas, asparagus, and half of the almond dressing. Toss well and adjust seasoning with more dressing and salt as needed.
  4. Serve topped with chopped chives and crumbled goat cheese.
