Spring Wheat Berry Salad

Ingredients

The salad

  • 1 cup wheat berries
  • 1 small red onion or shallots
  • 1 bunch asparagus
  • 1 cup walnuts
  • 8 to 10 radishes
  • 3 to 4 medjool dates or other dried fruit

The dressing

  • 2 to 3 tablespoons white balsamic vinegar
  • cup olive oil
  • about 1 teaspoon kosher salt
  • freshly cracked black pepper to taste
  • crushed red pepper flakes or minced hot chili pepper to taste

Instructions

  1. 1. Boil a large pot of water and add a tablespoon of kosher salt.
  2. 2. Finely chop the red onion or shallot and mix with vinegar in a bowl.
  3. 3. Prepare asparagus by cutting off the ends and slicing into small pieces.
  4. 4. Slice radishes thinly into rounds.
  5. 5. Cut dates into small pieces and set aside.
  6. 6. Optionally, toast walnuts in the oven at 350°F for 8 to 10 minutes.
  7. 7. Cook wheat berries according to package instructions, adding asparagus for the last minute.
  8. 8. Drain the wheat berries and asparagus, then season with salt, olive oil, pepper, and crushed red pepper.
  9. 9. Add the macerated onions, walnuts, radishes, and dates. Toss well.
  10. 10. Taste and adjust seasoning with more vinegar, salt, and pepper if needed, then serve.
