Spring Wheat Berry Salad

The dressing

white balsamic vinegar

crushed red pepper flakes or minced hot chili pepper to taste
Instructions
- 1. Boil a large pot of water and add a tablespoon of kosher salt.
- 2. Finely chop the red onion or shallot and mix with vinegar in a bowl.
- 3. Prepare asparagus by cutting off the ends and slicing into small pieces.
- 4. Slice radishes thinly into rounds.
- 5. Cut dates into small pieces and set aside.
- 6. Optionally, toast walnuts in the oven at 350°F for 8 to 10 minutes.
- 7. Cook wheat berries according to package instructions, adding asparagus for the last minute.
- 8. Drain the wheat berries and asparagus, then season with salt, olive oil, pepper, and crushed red pepper.
- 9. Add the macerated onions, walnuts, radishes, and dates. Toss well.
- 10. Taste and adjust seasoning with more vinegar, salt, and pepper if needed, then serve.
