Dressing Ingredients

Instructions
- Soak the wheat berries overnight in cold water.
- Drain the wheat berries and cook them in a pot covered with 3 inches of water for 1 hour.
- Drain and cool the wheat berries.
- In a large bowl, mix the diced cucumber, red pepper, tomato, minced garlic, parsley, and green onions.
- Add the cooked and drained navy beans to the vegetable mixture and stir.
- In a small bowl, whisk together the dressing ingredients: olive oil, balsamic vinegar, mustard, Tamari, and lemon juice.
- Once the wheat berries are ready, drain and rinse them, then stir them into the salad.
- Add the dressing just before serving and mix well.
- Season with kosher salt and black pepper to taste.
