Wheat Berry and Bean Salad

Ingredients

Salad Ingredients

  • 1 cup dry wheat berries
  • 2 cups cooked navy beans
  • 1 each English cucumber
  • 1 each red pepper
  • 1 large tomato
  • 2 large cloves garlic
  • 1 cup fresh parsley
  • 4 each green onions
  • to taste kosher salt
  • to taste black pepper

Dressing Ingredients

  • 2-4 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp hot mustard
  • 1 tbsp Tamari
  • 2 tbsp fresh lemon juice

Instructions

  1. Soak the wheat berries overnight in cold water.
  2. Drain the wheat berries and cook them in a pot covered with 3 inches of water for 1 hour.
  3. Drain and cool the wheat berries.
  4. In a large bowl, mix the diced cucumber, red pepper, tomato, minced garlic, parsley, and green onions.
  5. Add the cooked and drained navy beans to the vegetable mixture and stir.
  6. In a small bowl, whisk together the dressing ingredients: olive oil, balsamic vinegar, mustard, Tamari, and lemon juice.
  7. Once the wheat berries are ready, drain and rinse them, then stir them into the salad.
  8. Add the dressing just before serving and mix well.
  9. Season with kosher salt and black pepper to taste.
