Mediterranean Wheat Berry Salad

Instructions
- Preheat the oven to 400°F (204°C).
- Boil 3 cups of water in a small saucepan, add salt and wheat berries, then simmer for 25-30 minutes until tender.
- Drain the wheat berries and add them to a large serving bowl with 2 tsp olive oil and a pinch of salt.
- Prepare the leeks and onions, toss them with 1 tbsp olive oil, salt, and pepper, then bake for 23-28 minutes until tender and golden brown.
- For the dressing, combine all ingredients except olive oil in a bowl, then whisk in the olive oil to emulsify.
- Add the tomatoes, olives, roasted leeks, and onions to the wheat berries, and toss with enough dressing to coat.
- Serve with optional garnishes like hummus, pine nuts, parsley, and pita chips.
