Mediterranean Wheat Berry Salad

Ingredients

The salad

  • 1 cup wheat berries
  • 1 cup baby tomatoes (halved)
  • ¼ cup kalamata olives (halved)
  • 1 medium red onion (sliced)
  • 2 large leeks (green stems removed, thoroughly washed and diced)
  • 1 pinch salt

The dressing

  • ¼ cup red wine vinegar
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 tsp dried oregano
  • 3 cloves garlic (minced)
  • ½ cup good olive oil

Optional garnishes

  • to taste hummus
  • to taste pine nuts
  • to taste fresh parsley
  • to taste pita chips

Instructions

  1. Preheat the oven to 400°F (204°C).
  2. Boil 3 cups of water in a small saucepan, add salt and wheat berries, then simmer for 25-30 minutes until tender.
  3. Drain the wheat berries and add them to a large serving bowl with 2 tsp olive oil and a pinch of salt.
  4. Prepare the leeks and onions, toss them with 1 tbsp olive oil, salt, and pepper, then bake for 23-28 minutes until tender and golden brown.
  5. For the dressing, combine all ingredients except olive oil in a bowl, then whisk in the olive oil to emulsify.
  6. Add the tomatoes, olives, roasted leeks, and onions to the wheat berries, and toss with enough dressing to coat.
  7. Serve with optional garnishes like hummus, pine nuts, parsley, and pita chips.
