Wheat Berry Spinach Salad

Instructions
- Combine wheat berries in a medium pot with 3 cups of water and bring to a boil.
- Cover and simmer for 30-60 minutes until cooked through.
- In a large bowl, whisk together olive oil, lemon juice, ginger, garlic, salt, and pepper.
- Add baby spinach, golden raisins, and warm wheat berries to the bowl.
- Stir everything together and adjust seasonings as needed.
- Add scallions and pistachios, then top with crumbled goat cheese.
- Serve and enjoy!
