Wheat Berry Spinach Salad

Ingredients

  • 1 cup wheat berries
  • 2 tbsp extra virgin olive oil
  • 2 tbsp lemon juice
  • 1 tsp grated ginger
  • 1 clove crushed garlic
  • to taste salt
  • to taste pepper
  • 1 cup baby spinach, chopped
  • ¼ cup golden raisins
  • ¼ cup sliced scallions
  • ¼ cup unsalted toasted pistachios
  • 1 ounce crumbled goat cheese

Instructions

  1. Combine wheat berries in a medium pot with 3 cups of water and bring to a boil.
  2. Cover and simmer for 30-60 minutes until cooked through.
  3. In a large bowl, whisk together olive oil, lemon juice, ginger, garlic, salt, and pepper.
  4. Add baby spinach, golden raisins, and warm wheat berries to the bowl.
  5. Stir everything together and adjust seasonings as needed.
  6. Add scallions and pistachios, then top with crumbled goat cheese.
  7. Serve and enjoy!
