Whiskey & Wheat Berry Salad

Ingredients

  • 1 pound wheat berries, cooked
  • ¾ cup golden raisins
  • ½ cup whiskey
  • 1 tablespoon natural cane sugar (or brown sugar)
  • 5 ounces goat cheese
  • teaspoon adobo sauce (from a can of chipotle peppers)
  • cup olive oil
  • 1 tablespoon lemon juice
  • 1 zest lemon
  • to taste fine grain sea salt
  • 1 cup pinenuts, toasted
  • 3 handfuls lettuce, spinach, or arugula
  • scant 1 tablespoon fresh oregano leaves (or other chopped herbs)

Instructions

  1. Cook the wheat berries and set aside.
  2. Soak the raisins in whiskey and sugar for a couple of hours or overnight, then drain and save the whiskey.
  3. Mash the goat cheese with adobo sauce until well incorporated.
  4. Prepare the dressing by whisking together olive oil, lemon juice, lemon zest, 3 tablespoons of the whiskey, and salt.
  5. In a large bowl, toss the wheat berries, raisins, pine nuts, lettuce, and additional salt.
  6. Top with goat cheese and oregano, toss gently, and serve.
