Whiskey & Wheat Berry Salad

natural cane sugar (or brown sugar)

goat cheese

adobo sauce (from a can of chipotle peppers)

lettuce, spinach, or arugula

fresh oregano leaves (or other chopped herbs)
Instructions
- Cook the wheat berries and set aside.
- Soak the raisins in whiskey and sugar for a couple of hours or overnight, then drain and save the whiskey.
- Mash the goat cheese with adobo sauce until well incorporated.
- Prepare the dressing by whisking together olive oil, lemon juice, lemon zest, 3 tablespoons of the whiskey, and salt.
- In a large bowl, toss the wheat berries, raisins, pine nuts, lettuce, and additional salt.
- Top with goat cheese and oregano, toss gently, and serve.
