Ingredients

Salad ingredients

  • 1 cup dried wheat berries
  • 2 cups cooked chickpeas
  • 4 units carrots
  • ½ cup feta cheese
  • 4 to 6 cups arugula

Dressing ingredients

  • cup olive oil
  • 2 teaspoons honey
  • 2 cloves garlic
  • ¼ teaspoon red pepper flakes
  • 1 small lemon
  • ¼ teaspoon fine salt
  • to taste freshly ground black pepper

Instructions

  1. Cook the wheat berries in boiling water with salt until tender but chewy, about 1 hour, then drain and cool.
  2. Whisk together the dressing ingredients in a bowl.
  3. In a large bowl, combine the cooled wheat berries, chickpeas, carrots, feta cheese, and arugula.
  4. Drizzle the dressing over the salad and toss to combine.
  5. Serve immediately, keeping arugula separate if storing leftovers.
