Chickpea Grain Salad

The salad

The dressing

extra virgin olive oil

Instructions
- Cook the grain if needed and add it to a large mixing bowl with the remaining salad ingredients.
- In a separate small bowl, whisk together the dressing ingredients.
- Toss the dressing with the salad in the large bowl until mixed.
- Transfer to jars if desired and enjoy chilled or at room temperature within the next 5-7 days.
