Chickpea Grain Salad

Ingredients

The salad

  • 2 cup cooked wheat berries
  • 1 15 ounce can chickpeas
  • ¼ cup chopped dried apricots
  • ¼ cup cashew halves
  • 1 cup chopped baby spinach
  • 2 tablespoons chopped fresh cilantro

The dressing

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon ground ginger
  • ½ teaspoon cinnamon
  • ½ teaspoon cumin
  • ¼ teaspoon cayenne pepper
  • to taste salt and pepper

Instructions

  1. Cook the grain if needed and add it to a large mixing bowl with the remaining salad ingredients.
  2. In a separate small bowl, whisk together the dressing ingredients.
  3. Toss the dressing with the salad in the large bowl until mixed.
  4. Transfer to jars if desired and enjoy chilled or at room temperature within the next 5-7 days.
