Cilantro Lime Chickpea Salad

Instructions
- Chop the spinach in a food processor until very small.
- In a large bowl, combine the processed spinach, drained chickpeas, and chopped onion.
- In the food processor, blend lime juice, cilantro, mustard, sugar, garlic, cumin, and oil until smooth.
- Pour the dressing over the chickpea mixture and stir well.
- Add salt and pepper to taste and let it stand for about 10 minutes to develop flavors.
- Serve over a bed of grains like brown rice.
