Cilantro Lime Chickpea Salad

Ingredients

  • 1 15-oz can chickpeas, drained and rinsed
  • 2 cups spinach
  • ¼ cup sweet onion, chopped finely
  • 1.5 limes juice
  • ¾ cup fresh cilantro
  • ½ tsp sugar (or to taste)
  • 2 tsp Dijon mustard
  • 1 clove garlic
  • 1 tsp extra virgin olive oil
  • ½ tsp ground cumin
  • ½ tsp kosher salt
  • to taste ground pepper

Instructions

  1. Chop the spinach in a food processor until very small.
  2. In a large bowl, combine the processed spinach, drained chickpeas, and chopped onion.
  3. In the food processor, blend lime juice, cilantro, mustard, sugar, garlic, cumin, and oil until smooth.
  4. Pour the dressing over the chickpea mixture and stir well.
  5. Add salt and pepper to taste and let it stand for about 10 minutes to develop flavors.
  6. Serve over a bed of grains like brown rice.
