Instructions
- Rinse the chickpeas in a colander with cool water and let them drain.
- Chop the cilantro leaves and dice the red onion, then place them in a large bowl.
- Squeeze the juice from the lime into a bowl and add olive oil, cumin, cayenne pepper, salt, and minced garlic. Stir to combine.
- Add the drained chickpeas and dressing to the bowl with cilantro and onion, and stir to combine.
- Serve immediately or refrigerate for a stronger flavor.
