Ingredients

The salad

  • 2 15 oz. cans chickpeas (garbanzo beans)
  • ½ none red onion
  • ½ bunch fresh cilantro
  • 2 cloves garlic

The dressing

  • 1 none lime
  • 2 Tbsp olive oil
  • 1 tsp ground cumin
  • tsp cayenne pepper
  • ¼ tsp salt

Instructions

  1. Rinse the chickpeas in a colander with cool water and let them drain.
  2. Chop the cilantro leaves and dice the red onion, then place them in a large bowl.
  3. Squeeze the juice from the lime into a bowl and add olive oil, cumin, cayenne pepper, salt, and minced garlic. Stir to combine.
  4. Add the drained chickpeas and dressing to the bowl with cilantro and onion, and stir to combine.
  5. Serve immediately or refrigerate for a stronger flavor.
