Red Plum Wheat Berry Salad

Ingredients

Wheat Berries

  • 3 cups water
  • 1 cup wheat berries, uncooked

Italian Herb Vinaigrette

  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 2 tablespoons fresh chopped Italian herbs
  • ½ teaspoon salt (optional)
  • ½ teaspoon black pepper
  • ¼ teaspoon garlic powder

Salad

  • 4 cups packed chopped kale
  • 4 pieces plums, unpeeled, pitted, thinly sliced
  • 3 pieces radishes, thinly sliced
  • 3 pieces scallions or green onions, sliced
  • ¼ cup toasted pine nuts

Instructions

  1. Boil water in a medium pot, add wheat berries, cover, and cook until tender (about 30 minutes). Drain and cool.
  2. Mix olive oil, vinegar, herbs, salt (if using), black pepper, and garlic powder to make the vinaigrette.
  3. In a large salad bowl, massage vinaigrette into the kale.
  4. Add cooled wheat berries, plums, radishes, scallions, and pine nuts to the kale and toss well.
  5. Serve immediately or refrigerate leftovers for up to 5 days.
