Red Plum Wheat Berry Salad

plums, unpeeled, pitted, thinly sliced

Instructions
- Boil water in a medium pot, add wheat berries, cover, and cook until tender (about 30 minutes). Drain and cool.
- Mix olive oil, vinegar, herbs, salt (if using), black pepper, and garlic powder to make the vinaigrette.
- In a large salad bowl, massage vinaigrette into the kale.
- Add cooled wheat berries, plums, radishes, scallions, and pine nuts to the kale and toss well.
- Serve immediately or refrigerate leftovers for up to 5 days.
