Mediterranean Layered Dip

Ingredients

The dip base

  • 6 ounces feta cheese
  • 2 ounces cream cheese
  • ¼ cup olive oil
  • to taste salt
  • to taste pepper

The toppings

  • ½ cup marinated artichoke hearts
  • ½ cup kalamata olives
  • cup sun dried tomatoes
  • ¼ cup toasted pine nuts
  • ¼ cup finely chopped parsley

Instructions

  1. 1. Blend feta cheese and cream cheese in a food processor until finely chopped.
  2. 2. Add olive oil and process until smooth, about 2-3 minutes.
  3. 3. Season with salt and pepper to taste.
  4. 4. Spoon the whipped feta into a serving container.
  5. 5. Top with artichokes, olives, sun dried tomatoes, pine nuts, and parsley.
  6. 6. Serve with vegetables and crackers.
