Instructions
- Prepare the crust by whisking together flour and salt, then cutting in butter until pea-sized.
- Mix yogurt, lemon juice, and ice water in a separate bowl, then combine with the flour mixture to form a dough.
- Refrigerate the dough for at least 1 hour.
- Preheat the oven to 400°F (207°C) and roll out the dough to fit a 9-inch pie plate.
- For the filling, sauté diced onion and blanch broccoli florets briefly in boiling water.
- In a bowl, mix milk, eggs, salt, and pepper.
- Layer ham, broccoli, cheeses, and onions in the crust, then pour the egg mixture over the top.
- Bake for 45 minutes or until a knife inserted in the center comes out clean.
- Let the quiche stand for 5 minutes before slicing and serving warm.
