Ingredients

The crust

  • 1 ¼ cups all-purpose flour
  • 2 tablespoons all-purpose flour
  • ¼ teaspoon salt
  • 1 stick unsalted butter
  • ¼ cup Greek yogurt
  • 2 teaspoons lemon juice
  • ¼ cup ice water

The filling

  • ¼ cup onion, diced
  • 1 cup broccoli florets
  • 1 cup milk
  • 4 large eggs
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 cup cubed ham
  • 2 cups shredded Cheddar cheese
  • ¼ cup grated Parmesan cheese

Instructions

  1. Prepare the crust by whisking together flour and salt, then cutting in butter until pea-sized.
  2. Mix yogurt, lemon juice, and ice water in a separate bowl, then combine with the flour mixture to form a dough.
  3. Refrigerate the dough for at least 1 hour.
  4. Preheat the oven to 400°F (207°C) and roll out the dough to fit a 9-inch pie plate.
  5. For the filling, sauté diced onion and blanch broccoli florets briefly in boiling water.
  6. In a bowl, mix milk, eggs, salt, and pepper.
  7. Layer ham, broccoli, cheeses, and onions in the crust, then pour the egg mixture over the top.
  8. Bake for 45 minutes or until a knife inserted in the center comes out clean.
  9. Let the quiche stand for 5 minutes before slicing and serving warm.
