Ingredients

The chicken

  • 1 ¼ pounds boneless skinless chicken breasts, cut into 1 inch pieces
  • to taste salt and pepper
  • 1/3 cup cornstarch
  • 2 eggs beaten
  • 3 tablespoons vegetable oil

The sauce

  • 1/3 cup buffalo hot sauce
  • 1/2 cup brown sugar
  • 1 tablespoon rice vinegar
  • 1/4 teaspoon red pepper flakes

Garnish

  • 1/4 cup sliced green onions
  • as needed cooking spray

Instructions

  1. Preheat the oven to 350°F and coat a 9x13 inch pan with cooking spray.
  2. Season the chicken pieces with salt and pepper, then coat with cornstarch.
  3. Dip each chicken piece into the beaten eggs.
  4. Heat the oil in a large pan over high heat and cook the chicken in batches until golden brown.
  5. Place the browned chicken in a single layer in the prepared pan.
  6. In a bowl, whisk together the buffalo sauce, brown sugar, rice vinegar, and red pepper flakes.
  7. Pour the sauce over the chicken and bake for 35 minutes, stirring halfway through.
  8. Top with green onions before serving.
