Ingredients

Firecracker Sauce

  • cup ketchup
  • 2 tablespoons honey
  • 2 tablespoons soy sauce
  • 2 teaspoons chili sauce
  • 2 teaspoons sriracha
  • 2 tablespoons water
  • 2 teaspoons sesame oil

Chicken

  • 1.5 lbs. bone-in, skin-on chicken thighs

Chicken Breading

  • ½ cup all-purpose flour
  • 3 tablespoons cornstarch
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper

Sides & Garnish

  • 3 tablespoons olive oil
  • 1 teaspoon white sesame seeds
  • 2 tablespoons chopped green onions
  • to serve portion white rice

Instructions

  1. Preheat the oven to 400ºF.
  2. Prepare the breading by mixing all-purpose flour, cornstarch, kosher salt, and black pepper in a bowl.
  3. In a separate bowl, combine all ingredients for the firecracker sauce until well mixed.
  4. Dredge each chicken thigh in the flour mixture until fully coated.
  5. Heat olive oil in a large, oven-safe skillet over high heat and brown the chicken thighs skin-side down for 6-8 minutes on each side.
  6. Remove the skillet from heat and pour the firecracker sauce over the chicken thighs.
  7. Transfer the skillet to the oven and bake for 10-15 minutes until the chicken reaches an internal temperature of 165ºF.
  8. Let the chicken rest for 10 minutes before serving.
  9. Serve over rice and top with sesame seeds and green onions.
