Instructions
- Preheat the oven to 400ºF.
- Prepare the breading by mixing all-purpose flour, cornstarch, kosher salt, and black pepper in a bowl.
- In a separate bowl, combine all ingredients for the firecracker sauce until well mixed.
- Dredge each chicken thigh in the flour mixture until fully coated.
- Heat olive oil in a large, oven-safe skillet over high heat and brown the chicken thighs skin-side down for 6-8 minutes on each side.
- Remove the skillet from heat and pour the firecracker sauce over the chicken thighs.
- Transfer the skillet to the oven and bake for 10-15 minutes until the chicken reaches an internal temperature of 165ºF.
- Let the chicken rest for 10 minutes before serving.
- Serve over rice and top with sesame seeds and green onions.
