Ingredients

The main dish

  • 3 large sea scallops
  • 1 each pink grapefruit
  • a few sprigs watercress
  • 1 tbsp Balsamic Vinegar Pearls

Vinaigrette

  • Juice from your each grapefruit
  • ½ tsp ginger, chopped
  • 1 tsp white balsamic vinegar
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ½ tsp Dijon mustard
  • 1/8 tsp guar gum

Instructions

  1. Supreme the grapefruit over a bowl to catch the juice.
  2. Squeeze the remaining juice from the grapefruit remnants.
  3. Whisk together the vinaigrette ingredients until smooth and thick.
  4. Arrange the grapefruit supremes in the center of a plate.
  5. Heat olive oil in a frying pan until hot.
  6. Pat the scallops dry and sear them for about 1 minute on each side without touching each other.
  7. Place the scallops around the grapefruit supremes.
  8. Garnish with watercress, Balsamic Vinegar Pearls, and drizzle with vinaigrette.
