Seared Scallop with Grapefruit Supremes

Instructions
- Supreme the grapefruit over a bowl to catch the juice.
- Squeeze the remaining juice from the grapefruit remnants.
- Whisk together the vinaigrette ingredients until smooth and thick.
- Arrange the grapefruit supremes in the center of a plate.
- Heat olive oil in a frying pan until hot.
- Pat the scallops dry and sear them for about 1 minute on each side without touching each other.
- Place the scallops around the grapefruit supremes.
- Garnish with watercress, Balsamic Vinegar Pearls, and drizzle with vinaigrette.
