Ingredients

The scallops

  • 7–8 oz scallops

The sauce

  • ½ to 1 tablespoon salted butter or oil
  • 1 tablespoon maple syrup
  • 3 tablespoons pomegranate seeds
  • ½ to 1 tablespoon balsamic vinegar
  • ¼ teaspoon minced garlic
  • to taste fine sea salt
  • to taste black pepper

Instructions

  1. Wash and dry the scallops, then set them aside.
  2. Heat a pan over medium-high to high heat and add the butter and maple syrup.
  3. Once sizzling, add the scallops, 1-2 tablespoons of pomegranate seeds, and balsamic vinegar.
  4. Mix the sauce around with the seeds and scallops to form a glaze as the vinegar caramelizes.
  5. Add the minced garlic and a dash of sea salt.
  6. Pan-sear the scallops for 6-8 minutes, flipping them once or twice.
  7. Remove from heat and serve, spooning sauce and extra pomegranate seeds over the top.
  8. Garnish with cracked black pepper.
