Ingredients

The scallops

  • 1 lb jumbo natural scallops
  • to taste salt
  • to taste ground black pepper

The sauce

  • 1 tablespoon olive oil
  • 1 tablespoon butter, melted
  • 2 cloves garlic, minced
  • 3 tablespoons heavy whipping cream
  • ¼ cup water
  • 2 tablespoons white wine or Japanese cooking sake (optional)
  • teaspoon cayenne pepper
  • 1 teaspoon parsley leaves, chopped
  • 1 slice lemon wedges, quartered (for garnishing, optional)

Instructions

  1. Rinse the scallops and pat them dry, then season with salt and black pepper.
  2. Heat a skillet with olive oil and butter, then pan-sear the scallops until browned on both sides and set aside.
  3. In the same skillet, sauté the garlic, adding more olive oil if needed.
  4. Add the cream, water, wine, salt, and cayenne pepper, and simmer until the sauce thickens slightly.
  5. Return the scallops to the skillet along with parsley and lemon wedges, then serve immediately.
