Ingredients

The scallops

  • lbs sea scallops
  • to taste salt
  • to taste ground black pepper

The sauce

  • 4 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • ¼ cup white wine
  • 1 tablespoon Japanese mirin (optional)
  • 1 tablespoon lemon juice
  • to taste salt
  • 1 tablespoon chopped parsley

Instructions

  1. Rinse and dry the scallops, removing any side muscle.
  2. Season the scallops with salt and black pepper.
  3. Heat a skillet over medium-high heat and add 1 tablespoon of melted butter.
  4. Pan-sear the scallops until charred, then set aside.
  5. In the same skillet, add the remaining melted butter and sauté the garlic until light brown.
  6. Add white wine, mirin (if using), and lemon juice to the skillet.
  7. Return the scallops to the skillet, season with salt, and add parsley.
  8. Simmer the sauce lightly, then serve immediately.
