Ingredients

The scallops

  • 1 lb scallops, natural and untreated

The sauce

  • 1 tablespoon olive oil
  • 2 tablespoons butter, melted
  • 3 cloves garlic, minced
  • ¼ cup white wine
  • 1 pinch cayenne pepper
  • 1 pinch salt
  • 3 dashes ground black pepper
  • 1 tablespoon Italian parsley leaves, chopped

Instructions

  1. Rinse the scallops under cold water and remove the tough ligament.
  2. Pat the scallops dry with paper towels.
  3. Heat a skillet over medium to high heat and add olive oil and melted butter.
  4. Sauté the minced garlic briefly.
  5. Add the scallops to the skillet and pan-sear until both sides are browned.
  6. Pour in the white wine, and add cayenne pepper, salt, and black pepper.
  7. Bring the mixture to a light simmer and cook until the scallops are cooked through.
  8. Turn off the heat and serve immediately.
